Production technique: Traditional red vinification in 100 hl oak conical vats. Spontaneous fermentation with indigenous yeast, temperature controlled for about 20 days. Long maceration on the skins for 30 days.
Maturation: For 2 months in cement tanks, complete malolactic fermentation in first and second passage French Allier oak barriques for 24 months.12 months in bottle.
Alcohol: 14% Vol.
